It sort of works, but as with anything on Linux, the reality is a lot less pleasant than in theory. For distros like Debian, it is very easy to install a new DE, since its baked into the installer, but other distros may or may not work as well if you try to install a completely new DE. I recommend trying a bunch of distros with different DE installed and find one that suits your needs.

EB Games?? They were in the US for a while until Gamestop bought them iirc. Used to have an EB Games in my local mall like over a decade ago.
Why not RPCS3? Can almost run it on phones nowadays and a lot less of a hassle to tinker with
But you aren’t required to upgrade, it will just not be as fast/HD as it would be on newer hardware. On console it is very likely the old hardware will not be developed for at a certain point, so you will not be able to play it even if technically it would run decent on the hardware

It just feels so anti-consumer and everyones forgets about it and they just happily pay for content which can no longer be owned only rented.
If you pay for the discs, you can’t use the discs on future generations. Right? Ps4 can’t read ps3 or ps2 discs. Xbox one can read xbox and 360 discs, but they limit it to only specific games. So in general, you have to buy it once again on their online store, if its available at all.
And the best part is you don’t have to pay for online and you won’t need to rebuy your games each new console generation.
The only problem i see is Tasker by itself cannot prevent Android Auto from connecting, so it will still connect for a few sconds, even if you are able to disconnect it somehow.
I think you might be able to toggle wireless AA in the developer settings of AA, so maybe you could setup an Autoinput routine to tap the screen and turn on wireless AA only when you need it.
Also i think you’d be better off with a “on the wireless charger or not” state than trying to use a NFC tag at the same time
