Changed to a Galaxy S21, and there’s barely any app that works (my older chinese phone used to have this feature built-in the phone caller app. tried to install it on samsung, the recording feature didn’t work. Is this a samsung-google thing ?

On modern android, it’s about impossible without rooting your phone
i will root it if its necessary. any suggestions ? I also dont mind flashing a custom rom if thats what it would take (i used to have this freezer app, for freezing apps, and it also requires root or special permissions using adb now in the S21 … )
last time I did it was in 2020 so certainly things changed a lot… xda is your friend :)
